Matambre: Argentinian Stuffed Flank Steak

matambre-stuffed-flank-steak-collage1Matambre, as in mata-ambre which means ‘hunger killer’ in spanish, is a popular Argentinan recipe.  I found this recipe on the Jo Cooks website | |  This particular recipe requires grilling (please follow the link for instructions).  The FoodNetwork site | | provides a Matambre recipe that may be cooked in a dutch oven on your stove.  Either way, and, with your own variations of course, flank steak never tasted better!
